Morton’s has been in Sacramento for 15 but with its move to the base ofthe U.S. Bank the restaurant had to nearly double its employeess to 84 people to add the lunch The restaurant got applications from morethan 1,000o people for nearly 40 positions, said Neil Swinney, generall manager. Morton’s will serve lunch weekdays in its maindinin room, in its new bar caller 12-21 and on its open outdoor patio on Capitol Mall.
Even thoughh the restaurant’s move was literally only a few the move out of the retail environmeny of the downtown mall and into the ground floorr of a new office tower makes atremendous difference, said Tom Baldwin, chief executive and president of Morton’s (NYSE: who is here this week for the launch of the new Morton’ s location. Even before the doors were open to the Baldwin and Swinney were looking at some potential The new restaurant has some empty wall which could be used for more private wine The lockers have been sold out and therre has been a waiting list since therestaurantr opened.
Baldwin said he sees space for about eighf more of the lockers to the right of thefront door. Swinnet sees room for perhaps 12 more lockers between the restaurant andthe bar. The dining room of the new restaurant featuresa floor-to-ceiling glass wine case, which is kept between 55 degreesx and 58 degrees. Wine is a serious businesds at theSacramento location, Baldwin said, becausw the customers here are sophisticated abougt their wines. That might be why six of the 85 certifiedf sommeliers in the company work in theSacramento restaurant.
